This refreshing, simple pineapple slaw is versatile recipe you can serve on its own as a side dish, or as a topping for fish tacos, sandwiches, even hot dogs.

Its sweet and tangy flavor comes from a colorful mix of red and green cabbage, sweet pineapple, shredded carrots, and scallions, all tossed in a simple rice vinegar dressing with a touch of mayonnaise for creaminess.

CABBAGE: A combination of red and green cabbage adds color, crunch, and flavor. You can shred it fresh, or use a pre-shredded mix if you’re in a hurry.

PINEAPPLE: Fresh pineapple has the best flavor and texture, but well-drained canned pineapple in juice, will be fine if you’re short on time. Just cut it into 1/2-inch cubes so it blends well with the cabbage.

CARROTS: Shredded carrots add sweetness and substance to this slaw. Shred them yourself or use the pre-shredded type sold in bags in the produce department.

RICE VINEGAR: The mild acidity of rice vinegar makes it perfect for pairing with the pineapple. Use the plain variety, not seasoned, as that has extra sugar.

How to Make Pineapple Coleslaw

Simply combine the shredded cabbage, pineapple, carrots, and green onions in one bowl. Whisk the rice vinegar, mayonnaise, sugar, salt and pepper in another. Toss together and chill for at least half an hour to allow the flavors to develop.

Ingredients

  • 1-1/2 cups shredded red cabbage, (about 1/4 of an average head)
  • 1-1/2 cups shredded green cabbage, (about 1/4 of an average head)
  • 1 cup diced fresh pineapple
  • 1 cup shredded carrot
  • 3 green onions, sliced
  • 2 tablespoons chopped cilantro
  • 2 tablespoons rice vinegar
  • 1 tablespoon mayonnaise
  • 1 teaspoon sugar
  • Salt and pepper, to taste

Instructions 

  • Combine the cabbage, carrots, pineapples and green onions in a large bowl. Season well with salt and pepper and toss to combine.
  • In a small bowl, whisk together the rice vinegar, mayonnaise and sugar. Pour over the slaw and toss well to combine. Taste and adjust for seasoning. 
  • Chill for 30 minutes before serving.
