Ingredients

shredded red cabbage
(about 1/4 of an average head)

shredded green cabbage
(about 1/4 of an average head)

diced fresh pineapple

cup
shredded carrot
3
green onions
sliced

tablespoons
chopped cilantro
2
tablespoons
rice vinegar
1
tablespoon
mayonnaise
1
teaspoon
sugar
Salt and pepper
to taste
Instructions
Combine the cabbage, carrots, pineapples and green onions in a large bowl. Season well with salt and pepper and toss to combine.
In a small bowl, whisk together the rice vinegar, mayonnaise and sugar. Pour over the slaw and toss well to combine. Taste and adjust for seasoning.
Chill for 30 minutes before serving.
