Sheet Pan Chicken Sausage with Apples

Ingredients

  • 1 pound chicken sausage, cut into 1-inch pieces (see notes)
  • 1 lb baby yellow potatoes, halved or quartered (depending on size)
  • 2 Granny Smith apples, peeled, cored and cut into 1-inch pieces
  • 2 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • 1 tablespoon honey
  • 1 shallot, thinly sliced
  • 1 tablespoon fresh thyme leaves

Instructions 

  • Preheat the oven to 400°F and line a rimmed baking sheet with parchment paper.
  • Toss the potatoes with one tablespoon of olive oil, and arrange them on the baking sheet. Sprinkle with salt and roast for 10 minutes to give them a head start.
  • While the potatoes roast, whisk the remaining tablespoon of olive oil together with the honey in the bottom of a large mixing bowl. Add the sausage, apples, shallot, and thyme to the bowl. Season with a bit of freshly ground black pepper, then toss everything to combine.
  • After 10 minutes, remove the potatoes from the oven and add them to the bowl. Toss everything together, then return it to the baking sheet in a single layer.
  • Roast for an additional 15 minutes, or until the potatoes and apples are tender and the sausage is heated through.

Notes

ABOUT THE CHICKEN SAUSAGE: We like making this dish with fully-cooked chicken and apple sausage. However, you can use mild Italian chicken or turkey sausage instead. To ensure fresh sausage is cooked through, cut it into pieces and pre-roast along with the potatoes.
