4center-cut salmon fillets (4 to 6 ounces each)skin on
Salt and freshly ground black pepper
1/2cupfresh or panko breadcrumbs
2tablespoonsmelted butter
1-1/2tablespoonsprepared horseradish(not creamy)
1tablespoonhoney
Instructions
Preheat the oven to 425°F, line a baking sheet with parchment paper, and add the salmon, skin side down. Season lightly with salt and pepper.
Combine the breadcrumbs, 1/2 teaspoon salt, melted butter, horseradish, and honey in a small bowl. Spoon the mixture on top of the salmon and pat down with your fingers to form an even crust.
Roast the salmon until it's done to your liking, 4 to 7 minutes, depending on the size of the fillets.Note: We recommend cooking the salmon to an internal temperature of 125 to 130°F for medium doneness.
Switch the oven from roast to broil to toast the crumbs. Broil for 1 to 2 minutes, but watch carefully as the crumbs can burn easily.
To serve, slide a thin spatula between the salmon flesh and the skin. Transfer to individual plates and serve immediately.
