Spiced Vanilla Waffles with Mascarpone

The flavors of vanilla and allspice blend together beautifully, and the combination lends itself well to these light, crispy waffles. For a bit of a change, we topped them with a dollop of lightly flavored mascarpone cheese instead of butter and a sprinkling of additional allspice.

Spiced Vanilla Waffles with Mascarpone

Crispy, golden waffles flavored with vanilla and allspice and topped with lightly spiced mascarpone cheese in place of butter.

Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground allspice, plus more for garnish
  • 1/4 teaspoon cinnamon
  • 1-3/4 cups milk, low-fat is okay
  • 6 tablespoons oil
  • 2 large eggs, lightly beaten
  • 2 teaspoons vanilla extract

For the mascarpone topping:

  • 1/3 cup mascarpone
  • 1 tablespoon milk
  • 2 teaspoons vanilla extract
  • 2 teaspoons sugar, or more to taste
  • 1/4 teaspoon cinnamon

Instructions 

  • Prepare the topping mixture first by combining the mascarpone, milk, vanilla extract, sugar and cinnamon in a small bowl until smooth. Refrigerate until ready to use.
  • Heat the oven to 200°F and preheat an electric waffle iron.
  • In a mixing bowl, combine the flour, sugar, baking powder, salt and ground allspice. In a separate bowl, whisk together the milk, oil, eggs and vanilla extract. Add to the dry ingredients and combine until smooth. Allow the batter to stand for 10 minutes.
  • For 6-1/2-inch diameter waffles, pour 1/2 cup of batter onto the waffle plate, spreading evenly with a heat-proof spatula to within 1/4-inch of the edges. Gently close the lid and bake the waffles until crisp and golden brown.
  • As they cook, transfer the waffles to a baking sheet and place them in the warm oven. Plate the waffles individually, top with a tablespoon of the mascarpone and sprinkle a bit of the ground allspice over the top. Serve with maple syrup on the side if desired.

Notes

You can freeze leftover waffles in freezer bags, separated by sheets of wax paper. To reheat, place in a hot oven (400° to 425°) or toaster oven directly from the freezer and heat until crisp.
