Bleeding Brie

Raspberry preserves are the perfect topping for this rich and creamy pasty wrapped wheel of brie.



  1. Preheat oven to 400°F. Unfold the puff pastry sheet and place brie in the center. Spoon raspberry preserves on top of brie, then flip it over so that the preserves are on the bottom.
  2. Fold the pastry up over the cheese to cover it, then trim any excess.
  3. Beat egg with water and brush over the pastry, especially the seam. Place it seam side down on a baking sheet and brush the top of the pastry with the egg wash.
  4. Bake for 20 to 30 minutes or until crispy, golden brown. Let stand for 10 minutes before serving with fresh fruit, crackers or sliced baguette.
