We love homemade popsicles because they're a cinch to make and let you get creative with flavor combinations as well as keep the sugar to a minimum and avoid artificial colors and flavors. This recipe combines coconut milk, fresh mango and ginger to make a lightly sweet, tropical treat that's perfect for a hot summer day.Print
- 1 can light coconut milk
- 1/2 cup milk
- 1 cup cubed (1/2-inch) ripe mango
- 1/4 to 1 teaspoon ground ginger (optional, add according to taste)
- 1/4 cup sugar
- 1/4 cup water
- Place the coconut milk, milk, mango and 1/4 teaspoon of ginger in a blender or food processor. Blend on high until smooth.
- Place the water and sugar in a small, microwave safe bowl and heat for 1 minute on high. Stir until the sugar dissolves, then add to the mango mixture and blend again. Taste and adjust the ginger if desired. Pour into popsicle molds and freeze until solid, 4 to 6 hours.
Keep in mind that once frozen, the flavor of your popsicles will be less intense than the original mixture, so you may want to add a little extra ginger or sugar. Don't go crazy though – too much sugar will prevent solid freezing.
