Oven-Roasted Carrots

Ingredients

  • 6 carrots, peeled and cut into 1-inch pieces
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 400°F. Toss the carrots with olive oil, salt and pepper. Spread in a single layer on a baking sheet and roast until tender, about 25 to 30 minutes.
