An easy-to-make side dish of roasted potatoes flavored with spicy, smoky andouille sausage.

1-1/2 lbs new potatoes, quartered
1 link andouille sausage, quartered lengthwise and diced
1-1/2 tablespoons olive oil
1/2 teaspoon smoked paprika
1/2 teaspoon salt
Freshly ground black pepper
1 scallion, minced
Preheat the oven to 400°F.
Heat a heavy, oven-proof skillet over medium-high heat and add the sausage. Sauté until lightly browned and some of the fat has been rendered. Drain on paper towels and discard all but 1 tablespoon of the rendered fat.
Add the olive oil to the pan along with the potatoes and sauté for 3 to 4 minutes. Season with the smoked paprika, salt and a few grinds of black pepper.
Place the pan in the oven and roast until the potatoes are golden brown and tender, 12 to 15 minutes, turning the potatoes once about midway through. Top with the minced scallion and serve immediately.
