Snap Pea And Radish Saute
Radishes are most often considered to be a salad ingredient, but they take on a mellow, almost sweet quality when added to a quick sauté of fresh sugar snap peas. This dish makes a nice accompaniment to just about any roasted or grilled meat, poultry or fish.
- Ingredients:
- 3/4 lb fresh sugar snap peas
- 1/2 lb fresh red radishes
- 2 tablespoons butter
- 1/2 teaspoon salt
- 1/4 teaspoon sugar
Preparation:
Trim the tips from the sugar snap peas and remove the fibrous string that runs along the top of the pod. Trim the radishes and cut into 1/8-inch thick slices.
Heat the butter in a skillet over medium-high heat. Add the snap peas and sauté for about 1 minute. Add the radishes and continue cooking until they begin to turn translucent, about 1 to 1-1/2 minutes. Sprinkle with the salt and sugar, toss to combine and serve.
