Asian-Style Spinach

I love spinach - creamed, raw, lightly wilted - you name it, I'll eat it. The other night, I was making Soy-Kaffir Lime Chicken Breast with Glazed Cauliflower, and I wanted to make an Asian twist on sauteed spinach to go with it. So, I quickly came up with the recipe below, and I have to say, you couldn't ask for an easier or quicker side dish!Asian-Style Spinach

Asian-Style Spinach

Ingredients ~
1/2 tablespoon sesame oil
1 bag of fresh spinach
2 tablespoons orange juice (I had orange mango juice in the house)
2 - 3 green onions, thinly sliced
Salt and pepper to taste
1 tablespoon toasted sesame seeds

Preparation ~
Heat the sesame oil over medium heat in a wok or nonstick pan.

Add the spinach, a few handfuls at a time, and allow the spinach to wilt slightly.

Add the orange juice and salt and pepper and toss the spinach to coat. Allow most of the liquid to cook off, then transfer the spinach to a serving dish.

Garnish with thinly sliced green onions and sesame seeds.
