Butter Lettuce And Tomatoes With Red Onion Vinaigrette
A salad of tender butter lettuce and sweet grape tomatoes dressed with a mild garlic and sweet onion vinaigrette makes a great addition to just about any meal. If you can't find sweet red onions, any other variety of sweet onion will do ~ you just won't get the pretty pink color.
- For the dressing:
- 1 clove garlic, quartered
- 1-1/2 tablespoons sweet red onion, roughly chopped
- 3 tablespoons olive oil
- 2 tablespoons vegetable oil
- 1 tablespoon honey
- 2 tablespoon white wine vinegar
- 1/2 teaspoon dijon mustard
- 1/2 teaspoon salt
- For the salad:
- 1 pint grape or cherry tomatoes, washed and halved
- 10 ounces of assorted varieties of butter lettuce
- Salt and freshly ground black pepper to taste
Place the garlic and the onion in the work bowl of a small food processor/chopper. Pulse until both are finely chopped. Add the oils, honey, vinegar, mustard and salt and process until smooth.
Place the cut tomatoes in the bottom of your salad bowl, add the dressing and toss. Adjust the salt if necessary and add the black pepper to taste. Add the lettuce in a few batches, tossing well. Serve immediately.
I prefer to use a combination of olive and vegetable oil to keep the flavor mild and let the sweetness of the onion come through, but you can certainly use all olive oil if you prefer. Consider adding flax oil in place of the vegetable oil for a healthy change.
If you don't have a food chopper/processor, chop your garlic and onion as finely as possible and whisk in your other ingredients. You may need to add a bit more mustard for proper emulsification.
