            <title>Roasted Salmon With Curried Coconut-Tomato Sauce</title>
<description>A full-flavored fish like salmon lends itself well to the fragrant spices and velvety smoothness of this Indian-style sauce. The garlic and ginger develop a mellow flavor from simmering in the coconut milk and the fresh cilantro adds a tangy quality. Using light coconut milk ensures that the sauce is not overly rich as well.

            <title>Piquant Citrus Tomato Sauce</title>
<description>The addition of dried orange zest to chopped tomatoes transforms the basics of a traditional Italian marinara into a sweet-savory tomato sauce that is a perfect complement to simple, roasted meats and fish. Try it with wild-caught salmon, broiled and seasoned with salt, pepper and lemon.

            <title>Chilled Citrus Beet Soup</title>
<description>Try serving this chilled soup as a first course instead of salad. The mild earthy flavor of the beets pairs nicely with the tangy citrus flavors of the orange and lemon juices. A dollop of sour cream on top and a sprinkling of fresh dill bring more distinctive flavors to the mix that blend beautifully but still retain their individuality.

<title>Citrus And Fresh Herb Rubbed Turkey Breast</title>
<description>When you&apos;re only serving a few people at Thanksgiving, the prospect of a 10-pound turkey can seem a little daunting. A lot of people love leftover turkey, but who wants to be eating it for weeks after Thanksgiving? We opted for a mid-sized turkey breast, instead, to minimize both the preparation time and the amount of leftovers. The combination of herbs and butter spread under the skin resulted in moist and flavor-infused breast meat with crispy, golden skin.

            <title>Cranberry Sourdough Stuffing Cups</title>
<description>When it comes to Thanksgiving, stuffing holds an honored place in many family meals. When we saw a recipe for individual stuffing &quot;muffin&quot; cups on the Ocean Spray website, we simply couldn&apos;t resist the thought of breaking from the tradition of serving stuffing in the bird or in a casserole. We adapted the recipe a bit and found that it&apos;s perfect for smaller groups of people.

            <title>Fluffy Baked Orange Sweet Potatoes</title>
<description>Most sweet potato side dishes tend to be on the heavy side, but this easy recipe produces light, fluffy results with a bright citrus flavor. It&apos;s adapted from a recipe by chef Emeril Lagasse. His version calls for brandy instead of the triple sec and is served in hollowed out oranges. This version is a little less time consuming, although not quite as pretty.

<title>Cinnamon-Cardamom Apple Pie With Walnut Streusel Topping</title>
<description>The spicy-sweet flavor of cardamom adds a fragrant note to a more or less traditional apple pie filling. The buttery, nutty crunch of the walnut-streusel topping is a contrast to the apples, both in flavor and in texture. Serve slightly warmed with a creamy vanilla bean ice cream and you have comfort food at its finest.

            <title>Pork With Dangmyun Noodles</title>
            <description>
This is an adaptation of a well-known noodle dish from Korea called Jap Chae. The real thing uses beef and shiitake mushrooms and is a great dish, but I decided to try a variation. The noodles, made from sweet potato starch, are a real treat. They cook up clear and are perfect for soaking up the wonderful flavors in the marinade and stir fry sauce.</description>

<title>Vietnamese Noodle Salad With Caramelized Pork</title>
<description>A classic Vietnamese noodle salad is a delectable blend of flavors, textures and temperatures and quite possibly one of my favorite foods of all time. It is made from simple, fresh, pungent ingredients that maintain their individuality while still producing a medley of sweet, salty and spicy flavors. This version may not be quite authentic, but the ingredients are easy enough to find.

            <title>Crumb-Topped Roasted Cauliflower</title>
<description>Roasting cauliflower in a hot oven produces a tender, sweet product that needs very little in the way of accompanying ingredients in order to taste terrific. Here we&apos;ve tossed it with a little salt, pepper and olive oil and finished it off with bread crumbs - what could be simpler.

            <title>Cumin-Scented Honey Glazed Carrots</title>
<description>This recipe has just enough cumin to complement the sweetness of the roasted carrots and peppers without actually being a predominant flavor. The honey and orange juice are also added sparingly to in order to accent the natural flavor of the vegetables rather than dominate. Serve with roast chicken, turkey or pork.

            <title>Pastitsio - Greek Meat and Pasta Pie</title>
<description>Pastitsio is a layered meat and pasta pie, sort of a Greek-style lasagna, that uses a tubular pasta like ziti or penne and bechamel sauce instead of ricotta cheese. It&apos;s somewhat time consuming to prepare, but depending on how many people you are feeding, it can make several meals. Pastitsio is economical, freezes easily and reheats well. As a matter of fact, it actually develops more flavor by the second day.

            <title>Pineapple Craisin Noodle Kugel</title>
<description>Kugel is a traditional baked Jewish &quot;pudding&quot; or &quot;casserole.&quot; They are most commonly made from egg noodles or potatoes and often contain eggs. A kugel can either be sweet or savory. To satisfy my mild sweet tooth and my craving for a casserole, I put together this sweet kugel that uses fruit, sour cream, eggs and cottage cheese to achieve an almost custard-like consistency. I had a hard time classifying this recipe, but I eventually settled on an entree. However, this kugel is so versatile that it can be enjoyed for dessert, too. It all depends on what you&apos;re in the mood for.

<title>Potato, Spinach And Goat Cheese Frittata</title>
<description>The potatoes in this frittata make it a slightly heartier version than most. The creaminess of the melted goat cheese combined with the nutmeg and spinach flavor are a little bit reminiscent of creamed spinach. Served with a salad and a glass of chardonnay for a light but satisfying late evening meal.

<title>Grass-Fed London Broil Marinated In Rosemary And Garlic</title>
<description>This recipe was prepared with grass-fed London Broils from La Cense Beef of Montana. La Cense raises their cattle in an all-natural, humane environment without the use of antibiotics, steroids or pesticides. Aside from being a healthy, environmentally-conscious choice, grass-fed beef is beautifully marbled, juicy, tender and intensely flavorful.

            <title>Brandied Chicken Liver Pate</title>
<description>There are a number of methods for making pate, all of which produce differences in richness and texture. This recipe is on the lighter side of the spectrum. It is an adaptation of a family recipe given to me by a friend some years ago. The original version is a more standard Jewish recipe that uses rendered chicken fat and hard boiled eggs.

<title>Roasted Brussels Sprouts And Red Onions With Blue Cheese</title>
<description>Brussels sprouts are a traditional cool weather vegetable and an ideal complement for many entrees. Roasting on a high temperature is an easy way to prepare them, and it renders them tender and sweet. The addition of the roasted red onions and blue cheese in this recipe makes a full-flavored side dish that pairs nicely with red meats.
