Veal Burgers w/Tomato, Onion, Basil Sauce

These veal burgers are flavored with fresh basil and topped with melted mozzarella and a simple sauce made from sweet onion sauteed in a bit of butter, fresh tomatoes, fresh basil and splash of balsamic vinegar. Served on fresh Kaiser rolls accompanied by a salad tossed with a simple vinaigrette, they make a satisfying meal without too much fuss.

For the burgers ~
1 lb ground veal
3 tablespoons dry bread crumbs
1 tablespoon heavy cream
1 tablespoon chiffonade of fresh basil
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
4 slices mozzarella cheese
4 Kaiser rolls
For the sauce ~
2 tablespoons butter
1/4 cup sweet onion, chopped
3/4 cup fresh tomatoes, seeded and chopped
1 tablespoon balsamic vinegar
1/2 teaspoon kosher salt
Freshly ground pepper to taste
2 tablespoons chiffonade of fresh basil

Preparation ~
Heat the grill to medium.

Place the ground veal, bread crumbs, cream, basil, salt and pepper in a large mixing bowl. Using your hands, mix together gently, but thoroughly. Form the mixture into four equal patties, compressing gently. Brush both sides of each burger with a bit of olive oil and set aside.

Melt the butter in a large pan over medium heat. Add the onion and sauté for about 2 minutes until soft and translucent. Add the tomatoes, balsamic vinegar, salt and pepper and continue to cook for 3 to 5 more minutes, until the tomatoes have softened and the sauce begins to thicken a bit. Add the freshly ground pepper, taste, and add a bit more salt if necessary. Remove from the heat and set aside while you cook the veal burgers. Reserve the basil until ready to serve.

Place the veal burgers on the pre-heated grill and cook for 4 minutes on the first side, flip over, cook for another 2 minutes, top each with a slice of mozzarella cheese and cook for about 2 more minutes.

Add the fresh basil to the tomato sauce. Place each veal burger on a roll, top with tomato sauce and serve.
