Fettuccine w/Smoked Salmon And Dill

Cook up some fresh fettuccine and toss it with a quick, creamy sauce made from leeks, white wine, smoked salmon, peas and fresh dill.

Ingredients ~
6 ounces fettuccine
2 tablespoons butter
1 medium leek, sliced
1/3 cup dry white wine
1/3 cup heavy cream
1/4 lb smoked salmon, sliced into strips
1/3 cup frozen peas, defrosted
1-1/2 tablespoons fresh dill, chopped
Salt and freshly ground black pepper to taste

Preparation ~
Bring a large pot of salted water to a boil and cook the fettuccine according to the package directions.

While the pasta cooks, melt the butter in a large skillet over medium-high heat. Add the leek and sauté until soft, about 2 minutes. Add the white wine and simmer for 2 more minutes. Slowly whisk in the heavy cream and continue cooking for another 2 minutes until well combined and just beginning to thicken. Add the salmon and peas, cook for another minute or two until the peas are heated through. Drain the pasta and toss with the salmon and sauce. Add the chopped dill, season with salt and pepper and serve immediately.
