Stir-Fried Pork With Clear Noodles

This is a variation of a well-known noodle dish from Korea called Jap Chae, which is traditionally made with beef, shiitake mushrooms and a variety of clear noodles made from sweet potato starch called dangmyun. For our recipe, we substituted pork for the beef and omitted the mushrooms, but kept the flavor profile essentially the same as the traditional version.


Stir-Fried Pork With Clear Noodles

  • Ingredients:
  • 9 ounces cellophane noodles (we used sweet potato noodles - see notes)
  • 12 ounces boneless pork loin chops, cut into thin strips
  • 2 cloves garlic, very finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons sugar
  • 1 tablespoon mirin or rice wine
  • 1 egg, lightly beaten
  • 2 teaspoons vegetable oil, divided
  • 1 small carrot, peeled and cut into very thin strips
  • 3 scallions, sliced
  • 6 ounces fresh spinach
  • Sesame seeds
  • Sesame oil
  • For the sauce:
  • 1 clove garlic, finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar

Preparation:
Combine the pork, garlic, soy sauce, sesame oil, sugar and mirin in a bowl. Toss to coat well and set aside to marinate at room temperature.

In a separate bowl, combine the 3 sauce ingredients and set aside.

Cook the noodles according to the package directions. Drain, rinse well with cool water and drain again. Divide between 4 serving bowls.

Heat 1 teaspoon of vegetable oil in large skillet over medium heat. Add the beaten egg, swirl to coat the pan and cook until set, similar to an omelette. Transfer to a cutting board and slice into thin strips. Set aside.

Increase the heat on the pan to medium-high, add the remaining teaspoon of oil along with the pork and its marinade. Stir fry until pork is lightly browned and just cooked through, about 2-1/2 minutes. Add the carrot strips and cook for an additional minute.

Working quickly, add the chopped scallions, spinach, reserved egg strips and sauce. Toss just until the spinach wilts, about 1 minute.

Divide the pork-vegetable mixture between the bowls of noodles. Sprinkle each serving with sesame seeds and drizzle with a bit of additional sesame oil if desired.

About the noodles:
Dangmyun (sweet potato) noodles are available from most Asian grocers and we recommend them highly for their unique texture and ability to soak up the flavors of accompanying sauces and marinades. If you can't find them, feel free to substitute any type of cellophane noodle, or even whole wheat thin spaghetti.

Serving Suggestion:
Serve with Sweet-Hot Thai-Style Cucumber Salad and a well-chilled semi-dry Riesling.
