Indonesian-Style Flank Steak
Flank steak is a really flavorful cut of beef, not to mention more economical than many of the cuts that are suitable for grilling. Still, it's best to marinate flank steak ahead of time to ensure that you end up with a tender product. This Indonesian-style marinade is similar to an Asian peanut sauce. It does a wonderful job imparting its sweet-spicy flavor throughout the meat. We served this with Spicy Napa Cabbage Noodles.
- 1-1/2 to 2 lbs flank steak
- 2 tablespoons peanut oil
- 2 tablespoons sesame oil
- 2 tablespoons dry sherry
- 2 tablespoons soy sauce
- 2 tablespoons peanut butter
- 2 tablespoons rice wine vinegar
- 1 tablespoon grated ginger
- 1 tablespoon finely chopped garlic
- 1 teaspoon hot red pepper flakes, or to taste
Whisk together the ingredients for the marinade and marinate the steak for 2 to 4 hours, turning occasionally.
Grill directly over hot coals to an internal temperature of 145°F for medium rare (3 to 4 minutes per side). Cut into thin slices across the grain.
