Super-Quick Curried Chicken Breasts

I'm always looking for a quick, easy chicken recipe that doesn't require a long list of ingredients or a lot of cleanup time. This recipe is very easy to pull together in a short space of time and the ingredients are pretty standard pantry fare.Super-Quick Curried Chicken

Quick Curried Chicken Breasts

Ingredients ~
1 lb boneless, skinless chicken breasts
1/2 teaspoon onion powder
1/2 teaspoon lemon pepper
1/4 teaspoon ground ginger
2 tablespoons olive oil
1/2 cup chopped onion
2 teaspoons sugar
2 teaspoons curry powder
1/4 cup half and half
1/4 cup white wine
2 tablespoons lemon juice
1/2 cup plain yogurt
salt and pepper to taste

Preparation ~
Pound the chicken breasts to an even thickness and season on both sides with onion powder, lemon pepper, and ground ginger.

Heat 1 tablespoon of the olive oil in a skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 4 minutes on each side or until golden brown. Remove chicken from the pan and keep warm.

Add the chopped onion and the second tablespoon of oil to the skillet. Cook until translucent and add curry powder and sugar. Reduce heat to medium and continue to cook, stirring until the curry powder coats the onion and the mixture is well blended.

Add the half-and-half, white wine and lemon juice, stirring until smooth. Stir in the yogurt, add salt and pepper, taste and adjust the seasoning. Add the chicken back to the pan, and cook until heated through, turning several times to coat with the sauce.

Makes 3-4 servings.

This dish goes nicely with grilled pita bread and a quick saute of green beans and tomatoes, spiced with cumin, coriander and garlic.
