Cumin and Lime Grilled Pork Chops

These grilled pork chops are really quick and easy and have a nice sweet and spicy flavor. While you can certainly use your gas or charcoal grill, I found that a stovetop grill pan was a quicker solution for me. Just prepare your marinade ahead of time, and you'll have a fast solution for a light and healthy dinner when you get home from work for the day. Cumin and Lime Grilled Pork Chops

Cumin and Lime Grilled Pork Chops

Ingredients ~
2-4 butterflied pork chops, trimmed of excess fat

Marinade ~
1/4 cup of ponzu sauce (citrus-seasoned soy sauce)
1/4 cup lime juice
2 tablespoons olive oil
2 tablespoons fish sauce
1 teaspoon sambal oelek
1/2 teaspoon dried orange peel
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste

Preparation ~
Marinate your trimmed pork chops in the refrigerator for about 2-4 hours. Reserve marinade liquid for later use.

Spray your grill pan with non-stick spray and heat over medium-high heat. Once the pan gets plenty hot, cook the pork chops for about 4-5 minutes on each side.

If you'd like to make a quick pan sauce, take your reserved marinade and add it to a sauce pan over medium heat. Bring to a simmer and let it reduce slightly for about 5 minutes.

You'll know your pork is done when it's still slightly firm but yields to light pressure. Remove the pork chops to serving plates. Drizzle with pan sauce and serve.

Note: These pork chops are great served over brown jasmine rice. In keeping with the citrusy flavor, I added a splash of orange juice to the brown rice just before it finished cooking. Snow peas and a crispy Asian cabbage slaw also go nicely with the pork.

What a curious blend of spices — Japanese, Indian, and Indonesian. Sounds spicy and refreshing! I usually marinate my pork chops in Worchestershire sauce or soy sauce with sesame oil, so it would be nice to shake things up in my kitchen.

It really is tasty - and so light! I bet a splash of sesame oil would be good with these pork chops, too.
