Lime juice and fresh lime zest add flavorful tang to the buttery-rum richness of this recipe. Grilling the bananas gives them a little bit of a smoky quality that is just right - not too overpowering. Our bananas were probably a little more ripe than they should have been, so we had a little trouble with breakage on the grill. To avoid that problem, choose bananas that are yellow, but still show some green near the stems.
Ingredients ~
4 Tbs (60 ml) butter
1/4 cup (60 ml) dark rum
1/4 cup (60 ml) brown sugar
2 Tbs (30 ml) lime juice
The grated zest of 1 lime
1/2 tsp (2 ml) allspice
4 - 6 bananas, ripe but firm, peeled and halved crosswise
Preparation ~
Combine the butter, rum, brown sugar, lime juice and zest, and allspice in a saucepan and bring to a simmer over moderate heat.
Toss the bananas in the butter mixture to coat well and grill directly over hot coals for 4 to 5 minutes, turning 2 or 3 times. Return the bananas to the butter mixture and serve immediately.
Serves 4 to 6.
