The markets are loaded with beautiful looking strawberries and I thought that it would be a little different to bake some into a quick bread. I discovered this recipe on the website for Driscoll's Berries. It's easy and quick and the end result is deliciously moist with a delicate cinnamon flavor.
Ingredients ~
2 eggs
1/2 cup sugar
1/3 cup vegetable oil
1 tsp. vanilla
1 cup all purpose flour
1 tsp. cinnamon
1/2 tsp. baking soda
1/4 tsp. salt
12 large strawberries, mashed with a fork
Preparation ~
Preheat oven to 350°F. Beat the eggs and add sugar, oil, and vanilla. Sift together the flour, cinnamon, baking soda, and salt. Add dry ingredients to wet ingredients.
Fold in the mashed strawberries. Pour into greased, wax paper-lined loaf pan. Bake for 1 hour or until toothpick inserted in center comes out clean.
