Holiday Menu: Cider-Brined Turkey Breast
Traditional turkey dinners with all the trimmings can be rather overwhelming if you don't have a big guest list. This menu captures all the great flavors of Thanksgiving, but with less work and fewer leftovers.
Our starter is an elegant butternut squash and chestnut soup, followed by a main course of fresh turkey breast that's been brined in apple cider to keep it moist and flavorful.
Sides include a savory bread pudding in place of stuffing, roasted Yukon gold potatoes and homemade applesauce, and, for a sweet finale we made a beautiful, seasonally-inspired upside down cake.
