Nancie McDermott's Quick & Easy Thai is one of our favorite Asian cookbooks, so when she published Quick & Easy Vietnamese, we hoped for another winner. She did not disappoint us. The passion that the author has for Thai food has obviously carried over to Vietnamese cuisine. As in her past volume, this book has a glossary of ingredients to help with shopping and planning.
The recipes are simple and quick with the emphasis on simple ingredients, pungent flavors and fresh herbs. For quintessential Vietnamese flavors, try her Big, Cool Noodle Bowl with Roast Chicken, Cucumbers and Fresh Mint. It is sweet, salty, spicy and delicious. Or, for comfort food with a Vietnamese twist, try the Chicken Simmered in Caramel Sauce and a bowl of steamed jasmine rice - simple and satisfying.
